Water
Water is another foundation of our exceptional beers. Our premium brewing water comes from three wells 130 metres deep, protected by an impermeable layer for over 5,000 years. This commitment to quality goes beyond regulations; it meets and exceeds the strict standards of the German Drinking Water Ordinance, guaranteeing the quality of the mineral water used in our brewing process.
Barley malt
Malt is the heart of our beers, creating the unique flavor in every sip of Eichbaum. Our high-quality barley, which thrives in the ideal climate of the Rhine-Neckar region, primarily comes from local sources. We ensure this commitment to quality as well in our malting processes, which are entirely natural and free from chemical additives.
Yeast
Yeast is the backbone of our brewing process, ensuring consistent quality. We use only carefully selected yeasts to facilitate fermentation – the crucial process that turns sugar into alcohol and carbon dioxide. This not only determines the alcohol content but also shapes the unique flavour and character of our beers. Yeast also influences foam stability and taste, playing a vital role in the overall excellence of our beers.
Hops
Hops, which give our beers their characteristic bitter flavour, are sourced primarily from the Hallertau region of Bavaria. The diverse hop varieties offer a wide range of aromatic nuances – from floral to fruity – that complement the complex balance between bitterness and sweetness. Beyond flavour, hops act as a natural preservative, extending the shelf life of our beers. We are proud to source most of our hops from this renowned region, ensuring the highest quality in every brew.
